Summer Eats Edition: What’s Cooking?

Hi Friends! I hope you have been enjoying your lovely holiday weekend. I was happy to have Thursday off, but it sure made it difficult to go in on Friday! Will and I met up with one of my friends from work at the Eyes to the Skies Festival to watch fireworks on the 4th. They had a great show! The rest of the weekend we have just been taking it easy.
Today, I thought I would share a few pictures of some of the things we have been cooking up lately now that summer is here. The farmer’s market has so much more to offer now, so we have been trying to take advantage! You might notice that a new-to-me vegetarian protein has been making an appearance the last couple of weeks. This one is called tempeh! Tempeh is made from fermented soybeans formed into a patty and packs a ton of protein in each serving – 22 grams in fact! We have been having fun experimenting with it a bit. I hope to share a recipe or two with you in the next week!
